I created Poor Man's pasta when I was a student and had no money and an almost empty cupboard. Combining chopped tomatoes, as much garlic as you can handle and more Black Pepper than you would think is wise, produces a amazingly fresh tasty Vegan sauce that is so much more flavoursome than you would imagine.
I think this will become one of your go to quick meals! The sauce cooks in time it takes to boil the pasta, so this is dinner in 10 minutes.
1 can of chopped tomatoes
4 cloves Garlic
1.5 tsp Ground Black Pepper
Generous pinch of salt
Small pinch of sugar (1/8 tsp)
Glug of Olive oil.
Fill a large pan 3/4 with boiling water and when bubbling add Spaghetti. Allowing 100g - 150g per person.
Set a 10 minute timer.
In a small pan add a can of the best quality chopped tomatoes you can find and turn the heat to max.
Add 4 cloves of finely chopped or crushed garlic
Add 1 to 1.5 tsp of ground Black Pepper.
Start with 1 tsp and let it cook for a minute and taste. It should be spicy. If you can handle more add the other 0.5 tsp.
Add a generous pinch of salt Add a generous glug of Olive oil.
Turn down to a simmer and cook until the pasta is ready.
Drain the pasta and return to the pan.
Add the tomato sauce to the pasta .
Stir, serve and enjoy!
